Simpson’s first opened it’s doors in 1828 as a chess club and Knight’s Bar takes it’s name and inspiration from the game. With a heavy focus on gin and more specifically Gin & Tonic – this old fashioned, classic cocktail bar is reassuringly British in both décor and menu. Wood panels and ornate ceilings make for a very grand room but also one that doesn’t get quite the same amount of credit or kudos as the two bars in the hotel next door. With a focus on seasonal British ingredients and a lot of homemade or home grown produce within the menu – this is an excellent place for a delicious drink.
